Pastry, coffee, fire and ice (cream)

I’m mostly having a lot of fun being self employed.  Of course there are some grotty jobs – and a few frustrations, but during the winter season I’m opening four days a week – which means I have three days to do other things.   So far this winter that’s been two days of relaxing and regrouping (last week that meant running with Hector and knitting a hat from baby ‘Lake District Alpaca’ for a friend’s new baby) and my usual day of training and R&D – which has been loads of fun.

Wednesday is the designated development day and the schedule so far has included barista training, a road trip of coffee shops, delis, wood fired ovens and bakeries, two days in a busy and totally inspirational kitchen and tomorrow – ice cream and milkshake training…
